Acacia is the name of 1300 different species of thorny, evergreen shrubs and trees. Acacia blooms range from white and yellow to purple and red. The heady aromas of Acacia woods have been burned as incense throughout the world. Ancient Egyptians associated acacia tree with the tree of life, and it was used in creating the Ark of the Covenant and Solomon's Temple. Acacia has been associated with religious ritual for centuries. The alkoloids found in Acacias include dimethyltryptamine (DMT), and it is sometimes made into a brew for healing, ceremonial or religious uses.This delicate, almost clear raw Italian Acacia honey from Apicoltura Dr. Pescia. Like most acacia honeys, this will never crystalize, though it has a thicker, buttery consistency. Apicoltura Dr. Pescia is Tuscany's premiere honey producer. Dr. Pescia himself is a second generation beekeeper, with a degree in Agricultural Science from the University of Padua for his thesis on experimental beekeeping. His hives are moved throughout protected meadows and forests of Tuscany as the varieties of blooming flowers change with the seasons.
