Blue Borage (also known as star flower) is an herbal flower that grows throughout much of the world. The leaves of the borage plant are rich in calcium, vitamin c and potassium. Its flowers are one of the few, truly blue-colored edible foods on the natural world, and are often used in salads and dried in tea. Borage has been used medicinally to strengthen adrenal functions, and its essential oils are often prescribed to treat various skin diseases. In medieval times, borage was infused in drinks given to the Crusaders before heading out to battle to increase their courage.
