This raw macadamia nut blossom honey is a tropical island gourmet delicacy that everyone can appreciate. I am constantly hearing from people at honey tastings that this is their absolute favorite of all the honeys in the Honey Shop. Everyone loves macadamia nuts (they are known as the world's finest nuts), which are nutritious, contain no cholesteral, and are high in nutritionally important monounsaturated fatty acids. The Big Island Bee Company has their bees forage for the nectar of the Macadamia trees growing in Kau and Hilo in the southern part of the island, when the blossoms start to bloom in the late winter and early spring. The Macadamia is an evergreen found exclusively in coastal subtropical rain forests. It takes seven years for the tree to bear fruit, but it can live for sixty years or more. The tree produces white, pink and sometimes even purple flowers.Garnett Puett and Whendi Grad carry on four generations of Garnett's family tradition of bee keeping. They have been producing incredible raw honeys from local indigenous flowers for over 20 years.
Hints of roasted chestnuts make this honey a perfect pairing for goat cheeses and vanilla cheesecake. Delicious in fruit salads or orange juice based cocktails. A strong sweet nuttiness when tasted solo, it really comes alive in its complexity when paired with smoother, fattier cheeses and creamy desserts. Everyone loves this unusual, exotic treat.
