Raw honey tends to crystallize quicker in cooler environments, and resists crystallization longer in warmer surroundings. The recommended storage temperature for unprocessed raw honey is generally given at 50 degrees or lower, as cooler storage helps preserve each honeys unique flavors, aromas and colors, as well as its naturally occurring nutrients and enzymes. Honey should always be stored in airtight containers to prevent the absorption of atmospheric moisture which could cause the honey to ferment and spoil.
